Simple and quick summer recipes
Spicy Honey-Glazed Chicken Breast
Serving: 8 Servings
Prep time: 10 minutes
Cook time: 25 minutes
Ingredients
- 1/4 cup extra-virgin olive oil
- 1 small onion, finely chopped
- 1 clove garlic, finely chopped
- 1/2 cup honey
- 2 teaspoons hot pepper sauce
- 1/2 teaspoon chili powder
- 1 teaspoon lemon juice
- 8 skinless, boneless chicken breasts (about 4 pounds)
- Salt
- 1 pineapple peeled, cored and cut into 8 thick rings
- In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add the onion and garlic and cook, stirring, until translucent and beginning to brown, 6 to 8 minutes. Add the honey, hot pepper sauce and chili powder and simmer for 1 minute. Remove from the heat, stir in the lemon juice and set aside.
- Preheat a grill or large grill pan to medium-high. Rub the chicken with the remaining 3 tablespoons olive oil and season with salt. Grill until well marked, about 7 minutes. Flip and cook until the bottoms are well marked and the chicken is cooked through, another 2 minutes. Transfer to a plate and brush with the reserved honey glaze. Cover with foil and let rest for 5 minutes.
- Meanwhile, grill the pineapple until well marked on one side, about 4 minutes, then flip and cook for another 2 minutes. Serve with the chicken.

Light and Healthy Summer Lunch Idea: Dolmas Wrap !
Dolmas Wrap

- 1/2 cup(s) shredded romaine lettuce
- 1/4 cup(s) chopped cucumber
- 1/4 cup(s) chopped tomato
- 1/4 cup(s) low-fat plain yogurt
- 1 tablespoon(s) crumbled feta cheese
- 1/8 teaspoon(s) garlic powder
- 1 whole-wheat lavash (see Tips & Techniques) or whole-wheat wrap
- 3 prepared dolmas (see Tips & Techniques)
Directions
- Combine lettuce, cucumber, tomato, yogurt, feta and garlic powder in a small bowl. To serve, spread the lettuce-yogurt mixture on the lavash, top with dolmas, and roll.

Tips & Techniques
Lavash is thin, Middle Eastern bread found near other wraps and tortillas. It's a great alternative to flour tortillas for rolling sandwich ingredients into a wrap. Depending on the brand and size, one serving may be one whole bread or half of the bread — check the nutrition panel on the back of the package.
Dolmas are stuffed grape leaves that are traditionally filled with chopped vegetables, grains, and sometimes ground meat. Find prepared dolmas in cans or jars near other Middle Eastern ingredients and at some supermarket salad bars. Carb Servings: 3 1/2 starch, 1 vegetable, 1/2 low-fat milk, 1 fat

Patriotic Popsicles
Ingredients:
- I used Fruit Punch (red), White Cherry (white), and Mountain Berry Blast (Blue) Powerade (but you can use any other kind of colored, flavored drinks your family likes)
- little mini plastic cups
- straws (cut the bendy part off then snip in half)
- your freezer :)
Lay out a baking sheet in your freezer so it's flat, and individually fill mini cups about 1/3 of the way full of red colored drink and set on baking sheet in freezer. Let freeze for 30 minutes or so, depending on how cold your freezer gets. When hardened, fill another 1/3 of each cup with the white colored drink. Let freeze for approximately half the time as the red, basically until slushy. Insert the straw into the middle of the white layer and continue to freeze until completely hardened. Then fill the last 1/3 with blue colored drink and let harden. When ready to serve, run bottom of cup under a little warm water and the popsicle will pop right out! ENJOY!!
